What is the difference between early ballet, modern ballet, and New York-style ballet?
New York Style ballet means only one thing...George Balanchine. NYCB. (Neoclassical)
Balanchine dancers USUALLY don't dance full length ballets, because the style of dancing is very fast and the pace would be too hard to maintain during a full ballet. Pirouettes are usually ended in fourth position not fifth. There are some other differences technically as well, but I wont go into that lengthy of a description. Basically it is the speed of the movements and the way they are executed.
Modern ballet (Contemporary) tends to blend in contemporary themes and movements. The choreography is more daring then classical ballet. Use of unusual staging and costumes as well. Standard floor combinations are not adhered to as in classical ballet.
By early ballet, (Classical) I am assuming you are talking about 19th century (Romantic). Ballets like La Sylphide were popular and dancers had just began to perfect dancing on point. Or perhaps you were referring to the period of Marius Petipa with ballets like the Nutcracker, The Sleeping Beauty, and La Bayadere. These are the more traditional idea of what most people call ballet. In classical ballet, most things are close to being if not "set in stone". You can watch a performance that might have the exact or close to exact same choreography as 100 years ago
